A very flavorful way to eat one of our favorite nutritional powerhouses, the lentil! Ginger, garlic, onions, cumin, paprika and parsley served with a side of slightly spicy, vinegary collards. A popular Indian dish made lighter Morsel style. We will use a vegan yogurt to replace the typical dairy in Tikka Masala, and a marinated tofu to replace the chicken. The dish will be served with short grain rice mixed with cilantro on top. Shredded kale, cabbage and carrots topped with seeds and smoked tofu. Served with tahini dressing. A golden-hued stew that is rich and creamy, thanks to the addition of a dairy free cream base (cashew) and turmeric to give a beautiful color and anti-inflammatory benefits. This stew is hearty with carrots, celery, diced tomatoes and torn kale.
