This delicious vegan and gluten free dessert relies on a base of coconut milk and cashew for its creamy filling as well as a base of oats and almonds for its crust, but the addition of fig puree and ground walnuts really sweetens the deal. Broccoli, thin sliced peppers, carrots, and crispy baked tofu, fish and peanut free sauce, served with rice noodles. This gluten free and vegan version of a Thai favorite is lightened up and delicious! The customer will need access to boiling water to cook the noodles. Sea island peas (like black eyed peas, just slightly smaller), brown rice, loads of southern spices, and stuffed into a bell pepper. Peppers will be served over a red pepper and tomato sauce ready for customers to bake! *inspired by Bryant Terry's, Vegetable Kingdom Gluten-free penne noodles tossed with roasted broccoli, caramelized, garlic, onions, and roasted red peppers.
